Concord grapes - discovered these beauties while t Concord grapes - discovered these beauties while taking refuge in @wholefoods air conditioning.  Outside it’s literal 🔥 Inside the dream@of autumn 🍂 is strong!

Concord 🍇 are surprising interesting - they are native to North America, used in Welsh’s and jams, the flavor is as American as apple pie.  Which always seemed like an overly sweet kids thing to me.  But I’m reconsidering after reading up on how prized these little guys are.  They certainly are gorgeous big juicy orbs that smell incredible!!! The whitish bloom is normal and washes off easily.  They are only in season for a few weeks and I’ve been told that these are best used immediately.  So here it goes - Concord grape sorbet - wish me luck!!

Phase 3 of the #chiaroscuroinspired challenge hosted by @twiggstudios & @boxofspice is to recreate an old masters painting.  The intention was to copy ‘Boy Peeling Fruit’ - but our knives were dull and @halstellini is no boy 😳. So we went with what had - it’s the light and the intense concentration on the task that I tried to capture.

The 🥜 are for an ice cream cake (coming soon!) and the sweater - well, I snapped this for phase 2 of the #chiaroscuroinspired challenge hosted by @boxofspice & @twiggstudios  With all the soft dark moody colors it just felt right despite the heat. The combination of gelato/ice cream and old masters inspired lighting is - unusual.  Or just crazy.  Clearly it works for me.

So...I wanted to capture that perfectly still late summer vibe as I put together a plum swirl.  This is the moment between summer and fall when the colors and light start shifting and it all feels a bit melancholy (this is also the last moment before an avalanche of plum pulp !)

The eggs are what make it ‘custard’. Technically I believe the FDA (here in America) defines a custard as needing to contain at least 1% egg.  That’s nothing really - this one has lots of egg yolks and that’s what makes it glorious!

Make no mistake, I’m not a big egg eater - just the opposite really.  Yet in ice cream egg yolks do something magical - they improve the texture AND help stabilize it.  The result is a super rich creamy texture - very different than Philadelphia style (eggless) scoops (which are a different but just as wonderful experience).

Any egg yolk will do but I 💕 @vitalfarms - no ad here, just a lot of serious love for how they raise their chickens (the results are some truly beautiful deep orange yolks). Anyway, this is super easy to whip together (check out the how-to in my story highlights)

Roasted strawberry swirl - strawberries and I have Roasted strawberry swirl - strawberries and I have a tumultuous relationship.  I love them but in ice cream they have let me down over and over again.  Too icy.  Too flavorless.  I was resigned to believing my expectations were too high - perhaps my idea of ‘strawberry’ had been shaped by mass produced ice creams.

Then I roasted the little guys - and magic!  The heat takes out some of the water leaving an intensely strawberry mush that freezes beautifully - no icy fruit.  It’s the closest I’ve come to replicating the experience of eating fresh summer  berries that smell so juicy you can taste them before the first bite.

Italian Pistachio - the holy grail of gelato. It Italian Pistachio - the holy grail of gelato.  It took over a year to get it right.

Real Siciliano Italian pistachio paste is green gold - rare and expensive AF.  There’s no getting around it.  I tried every method from making pistachio butter to steeping nuts in milk (plus a few ‘weird’ experiments) Nothing matched the flavor and texture found in old school gelaterias. .
Buying proved to be no easier.  The majority of pistachio pastes are actually mostly almonds.  Pistachio cream sounded promising but the best of them have a ton of sugar and the worst are nothing but oil and fillers.  The other option was a giant commercial size bucket that cost nearly $500.  Finally I found a small jar on Amazon - hit buy and forgot about it until it showed up this week in the middle of the pandemic.  I made it using the technique I learned while interning at a gelateria.  It churned out perfectly - that elusive pistachio flavor with that slightly elastic texture which sets gelato apart from ice cream. 🍨👏
