HOT FUDGE SAUCE
- 214g heavy cream
- 26g butter
- 82g sugar
- 29g bittersweet chocolate
- 83g cocoa powder dutch processed
- 1/4 tsp espresso powder
Finely chop the bittersweet chocolate.
Put cream, butter, brown sugar and sugar in a saucepan and bring to a simmer. Once the sugars are fully dissolved add the bittersweet chocolate and stir until melted.
Off the heat mix in the cocoa powder and espresso powder. Put back on heat and stir until shiny and thick. Serve while warm or store in the refrigerator.
