This chocolatey sauce is a lot like supermarket chocolate syrup but without the artificial ingredients and a lot less sugar.   No special techniques required, it’s a straightforward foolproof recipe that comes together in 15 minutes. 


  •    160g   brown sugar
  •     127g   water
  •      44g   cocoa powder*
  •      22g   bittersweet chocolate
  • 1/4 tsp instant espresso powder
  • 1/4 tsp vanilla extract 
  • pinch of  salt


Combine everything except the vanilla and salt in a heavy-bottomed saucepan.   Cook over medium heat until the sugar is dissolved and just barely simmering.  

Take it off the heat and stir in the vanilla and salt.   

Serve warm or at room temperature. 


  • Cocoa powder is the backbone of the flavor in this sauce so using a high-quality powder is going to make a big difference.  Look for a powder that has a minimum of 20% cocoa butter.
