Despite Starbucks insistence, it's going to be a c Despite Starbucks insistence, it's going to be a couple of weeks before I'm ready for Pumpkin Spice everything (it's friggin' hot out here!) . In that spirit, I'm teaching a series of live classes over three weeks starting this Sunday to help ease the seasonal transition. . I'm sharing how to make boozy popsicles and the craft cocktails that inspired them. The journey starts with the Strawberry Daiquiri using the last of the summer fruits (a world apart from daiquiri mixes). Then things get spicier with a gorgeous Spicy Mango Margarita. Finally, as fall kicks in for real, it's time to bust out the bourbon for a Berry Bourbon Smash (a cousin of the better known Mint Julip). . Class is held on Zoom, and we'll make the recipes together - starting with craft cocktails which we'll sip while building the popsicles and chatting. . I know summer is truly here when I can smell the strawberries - I swear you can taste them just from the aroma. Capturing that sensation in ice cream is - challenging. 🍨 Even meh vanilla and chocolate are still pretty damn delicious. Bad strawberry is just...bad 🤷‍♀️ . I found the best way to tap into that amazing summer flavor is just to let the berries do what they do best without trying to blend them into the ice cream (which creates all sorts of texture challenges). A big jammy swirl bursting with fresh berries surrounded by a slightly tart cream cheese base. Berries and cream in every bits. @halstellini finished the entire batch before I even had a chance to post this (I ‘might’ have helped) . Coconut joy popsicles - my summer 💕 🥥 I always thought the best part of summer isn’t really about breaking the rules, it’s about relaxing them. Less gravitas. More fun. Particularly this year. When I first moved to Santa Monica (and for a long time after) nothing was more fun than the secret frozen candy stash at the Laemmle’s on 2nd street. A tiny movie theater with ice cold air conditioning and (if you knew to ask) frozen Junior Mints and Mounds bars at the concession stand. The best. 🥥 These popsicles are all that. 2 kinds of coconut, some rum to tame the sweetness and a dark dark chocolate shell. As for sitting in the dark with a bunch of strangers watching a movie - I don’t know if the Laemmle’s will survive this summer but I suppose we could just turn off the lights and fire up Netflix. . Red grapefruit & Campari Italian style sorbet. 🍨 A big part of why I started The Gelato Life is because I became disillusioned about starting a gelato business after seeing what actually goes. @forbes reported this week about “the ice cream con” in Italy - gelato stores using industrial mixes and whipping their product full of air. . While I can’t speak for Italian shops, I did intern at two very big ‘name’ gelateria outposts here in the states. Was that an education! One was a well known Italian franchise that claimed to be artisanal & organic. The gelato was a mix shipped over in bags, thawed and then churned in their machines. Sometimes a big had clearly been thawed and refrozen. The other place straight up used Pre-Gel industrial mixes - the equivalent of whipping up a box of Kraft Mac & Cheese and saying it’s farm to table. No shame in the boxed stuff, just be honest about what is being sold. . Anyway, glad to see that Italy wants to crack down on this. There are so many amazing truly artisanal gelato makers out there. It takes a lot of time, money and experience to run a legit gelato shop, it should be a fair playing field. .
